The Ultimate Chicken Fajitas

Cook Time: 20 minutes

INGREDIENTS

  • 1 pound boneless, skinless chicken breasts

  • 2 tablespoons extra- virgin olive oil

  • 2 tablespoons balsamic (Trust Me!)

  • 1 tablespoon ground cumin

  • 1 teaspoon garlic powder

  • 1 large red bell pepper, sliced

  • 1 large yellow bell pepper, sliced

  • 2 cups onion, sliced (red or yellow)

  • 1 tablespoon lime juice

  • 1 package corn tortillas or flour

Toppings

  • lime juice, cilantro, sour cream, cheese, salsa, avocado, or pico de gallo

HOW TO

  1. Preheat oven to 400 degrees F. Coat a large rimmed backing sheet with cooking spray or line with tin foil.

  2. Cut chicken breasts in half horizontally, then slice into strips. Combine olive oil and chicken into a bowl and mix.

  3. Place chicken on the baking sheet and roast on the middle rack for 15 minutes in the oven.

  4. Cut red and yellow bell pepper into strips. Chop the onion until diced. Add your onion and bell peppers to a baking sheet and coat evenly with olive oil, balsamic, fajita seasoning and mix.

  5. Take the chicken out of the oven and place onto the baking sheet. Add the fajita seasoning to the chicken and mix ingredients.

  6. Place baking sheet in the oven and bake for 20 minutes.

  7. Once the chicken is fully baked and the vegetables are browning in spots, add 5 minutes to the timer. Remove from the oven and stir in lime juice.

  8. Serve the chicken and vegetables on the tortillas, warmed. Add a squeeze of lime juice and top with any desired toppings!

  9. Leftovers may be stored in the fridge for up to 4 days. Enjoy!
