NUTRITION TIP

High protein casserole for any occasion!

INGREDIENTS

  • 3 tablespoon olive oil, divided

  • 1 small white onion, finely diced

  • 2 bell peppers, diced

  • 1 lb ground chicken (this can be substituted for ground beef or ground turkey)

  • 1 tsp garlic powder

  • 1 tsp oregano

  • 1/2 tsp black pepper

  • 1/4 tsp red pepper flakes

  • 1 lb potatoes, diced

  • 1 cup baby spinach

  • 8 eggs

  • 1/3 cup of milk— I used skim milk

  • 2 1/2 cups shredded cheese, divided

HOW TO

  1. Preheat oven to 375 degrees and grease a baking dish.

  2. In a large pan, heat 2 tablespoons of oil on medium heat. Add your onion and bell peppers. Stirring occasionally for 5 minutes until browned.

  3. Add your ground chicken to the pan, stirring in your garlic powder, oregano, red pepper flakes, and black pepper. Cook the meat while breaking it up in the pan until there is no pink left. Add mixture to a bowl and set aside.

  4. Add another tablespoon of olive oil and a cup of water to a pot, add diced potatoes, and cover. Cook on medium heat until potatoes have softened. Add potatoes to a small bowl and set aside.

  5. In a separate bowl, whisk your 8 eggs and add your cup of milk. Pour into the bowl with your meat and potatoes and stir the mixture together. Add your 1 1/2 cheese and stir. (Add more milk as needed).

  6. Pour in your greased baking dish and top with the remaining cheese. Sprinkle spinach on top, cover with foil, and bake. Bake for 35-40 minutes. Remove foil and bake for another 10-12 minutes.

  7. Take your baked casserole out of the oven and enjoy!
