INGREDIENTS
Fresh salmon fillets
Brussels sprouts
1 cup walnuts
4 tablespoons honey, divided
1 tablespoon brown sugar (optional)
1/3 cup olive oil
1 tablespoon soy sauce (low-sodium if you prefer)
2 tablespoons teriyaki sauce
Rice of your choice (alternatives: cauliflower rice or quinoa)
HOW TO
Preheat your oven to 400°F (200°C).
Prepare the Brussel sprouts glaze by combining 2 tablespoons honey, 1/3 cup olive oil, 1 cup crushed walnuts, sprinkle of brown sugar (optional) in a small bowl. Set aside.
Place the Brussel sprouts on a baking sheet lined with parchment paper.
Drizzle the glaze evenly over the Brussel sprouts making sure to coat generously.
Pop the baking sheet into the preheated oven and let it cook for about 15-20 minutes, or until the Brussel sprouts are cooked to your liking. I like my Brussel sprouts to be crispy!
While the Brussel sprouts are cooking, prepare your Salmon and Salmon glaze.
Prepare the Salmon glaze by combining 2 tablespoons honey, 1 tablespoon soy sauce, 2 tablespoons teriyaki sauce in a small bowl. Set aside.
Place salmon fillets on a baking sheet lined with tinfoil and coat evenly with the glaze.
Place salmon in the oven and let it cook for 15- 20 minutes, or until done.
Once cooked, remove from the oven and let it cool for a few minutes. Serve with your favorite whole grains, such as quinoa or brown rice, and enjoy your well-deserved, flavorful feast!
