Gnocchi Goodness

Hi peeps. I know it’s Christmas Eve and there is a lot of food to enjoy, but this Christmas we are doing things a little differently. I made this recipe and thought the colors matched the occasion— pesto sauce is optional. This recipe may seem so simple but sometimes we need simple.

INGREDIENTS

  • Gnocchi— I used cauliflower gnocchi from Trader Joe’s

  • Cherry tomatoes

  • Pesto— I made my own but store bought will do!

  • Olive oil

OPTIONAL

Pesto

  • 1 + 1/2 cups fresh basil

  • 1/2 cup walnuts

  • 1 garlic clove

  • 1/2 lemon or to taste

  • 1/2 teaspoon salt

  • 1/2 cup honey

  • 1/2 cup olive oil

HOW TO

  1. Heat oven to 400 degrees.

  2. Add your gnocchi and cherry tomatoes to a baking sheet.

  3. Drizzle with olive oil & place baking sheet in the oven for 25 minutes, stirring halfway through.

  4. Add salt + pepper to taste.
