Tzatziki Chicken Bowl

Start by grabbing your favorite grain, whether it be rice, quinoa, couscous, or even potatoes. Cook it up according to the instructions on the package, and then set it aside. While that's cooking, you can prepare the other ingredients.

Feeling short on time, not to worry! Pick up a rotisserie chicken from the grocery store, and it's just as delicious. Heat it up in a pan until it's nice and crispy.

Next up, chop up some fresh veggies. We're talking cucumbers, tomatoes, red onion, and bell peppers. You can even throw in some kalamata olives if you're feeling fancy. Toss the veggies in a bowl and add a dollop of tzatziki sauce on top.

INGREDIENTS

  • Chicken breast

  • 1 cup diced onion

  • 1 cup potatoes

  • 1 cup diced cucumber

  • 1 cup cherry tomatoes

  • Pita Bread

  • 2 tbsp olive Oil

  • 1/2 cup Tzatziki

HOW TO

  1. In a mixing bowl, add chicken breast, 1 tbsp olive oil, pepper, paprika, garlic powder, oregano and mix. In medium pan, let onion brown for 5 minutes and occasionally stir. Place chicken breast in a frying pan on medium-high heat and cook until done.

  2. In a medium pan add your potatoes in a cup of water and cook for 10 minutes or until tender.

  3. While the chicken and potatoes are cooking, chop the tomatoes and cucumbers.

  4. Once the chicken breast and potatoes are done, add your chicken to a bowl and mix with tzatziki sauce.

  5. Add your chicken, tomatoes, cucumbers, and potatoes to a bowl. Drizzle with 1 tbsp olive oil and tzatziki sauce.
