Homemade Twix Bars
Hi peeps, I am a Twix lover but these are what I like to call “Twix with a healthy twist.” They're perfect for a midday pick-me-up, or as an after dinner treat. Your sweet tooth will thank you!
INGREDIENTS
Shortbread base
1 cup almond flour, packed fine— I used Bob’s Red Mill
3 tbsp coconut oil, melted
2 tbsp pure maple syrup
1 teaspoon vanilla extract
Peanut butter layer
1/2 cup of peanut butter
1/2 cup of pure maple syrup
1 teaspoon vanilla extract
1/4 teaspoon sea salt
Chocolate layer
3/4 cup chocolate chips— I used lily’s baking chips
1 tbsp coconut oil
HOW TO
Preheat oven to 350 degrees and line a 8x8 pan with parchment paper.
In a medium bowl add your almond flour, coconut oil, maple syrup, vanilla extract, and salt. Mix together until a thick crumb texture is formed. Add to your 8x8 pan and evenly distribute. Bake for 10 minutes and allow for the crust to cool before adding your peanut butter layer.
Add peanut butter, maple syrup, vanilla extract, and sea salt to a medium pot and place on medium-low heat. Allow the mixture to slightly bubble and don’t forget to stir!
Pour over slightly cooled crust and place in the freezer for 15-20 minutes OR until peanut butter is completely hardened.
Add chocolate chips and coconut oil to a microwave safe bowl and melt chocolate in increments of 30 seconds, stirring each time until melted.
Pour chocolate layer over peanut butter layer and evenly distribute. Place in freezer until completely hardened and bars are cooled.
Remove bars from freezer and cut entire pan of bars to resemble a Twix bar.
Keep in fridge until ready to serve.
