NUTRITION TIP

INGREDIENTS
2 bananas
2 eggs
1/4 cup almond flour (alternative: protein powder)
1/2 teaspoon cinnamon
1/4 cup blueberries
Maple Syrup ( I use any kind of all natural maple syrup— Log Cabin!)
HOW TO
In a large mixing bowl, mash the banana until smooth. Set bowl aside.
In another small bowl whisk 2 eggs and add to the large bowl with the banana. Whisk together the almond flour, cinnamon, eggs, and blueberries. Make sure all the ingredients are evenly combined.
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to grease the pan and ensure the pancakes don't stick.
Once the pan is hot, pour approximately 1/4 cup of batter onto the skillet for each pancake.
Cook the pancakes for about 2-3 minutes, or until bubbles start to form on the surface. Carefully flip the pancakes using a spatula, and cook for an additional 1-2 minutes, or until the pancakes are golden brown and cooked through.
Transfer the cooked pancakes to a serving plate and cover with a clean kitchen towel to keep them warm while you cook the remaining batter. Repeat the process until all the batter is used.
Serve the pancakes warm with your favorite toppings, such as maple syrup, whipped cream, additional fresh blueberries, or a dusting of powdered sugar.
